Mom’s Chicken Corn Chowder

This recipe is from my mom, who was an excellent cook.  She cooked a hot homemade meal for us every night and she always made everything taste so good!  My mom was a great teacher and I thank her for her patience and willingness to let us cook in her kitchen!  (Some days I really miss my mom)  I hope that I followed her example by allowing my kids to feel free  to cook and experiment in my kitchen.  I hope that you will let your kids cook with you and that you can share some fun memories in the kitchen, because that is where we spend so much time together as a family.

This recipe is one of those good comfort foods that I turn to a lot of times.  It is easy to make, yet is a good hearty soup that will fill you up and make you feel oh so good!

Mom’s Chicken Corn Chowder
3 quarts water or chicken broth
8 chicken bouillon cubes
Put in large pot and bring to a boil.
Add 2 cups each: chopped broccoli, carrots, corn, celery, cauliflower, and 1 medium onion.
Cook veggies in broth until tender crisp.
Make roux: (1 cup butter melted then stir in 1 cup flour)  Add roux to the soup mixture.
Add 1 16 oz jar of pasteurized cheese (Cheese Whiz)
Add 2 cups cooked chicken or turkey.
Heat through and serve.

This is one of those recipes that taste so good on a cold, chilly, fall or winter evening because it is so full of goodness that it just warms your soul!  Serve it up with a slice of bread and watch the smiles appear!
