Lasagna Roll-ups

I watched the Pioneer Woman cooking show the other day and she made some Lasagna Roll-ups for Ladd’s Grandmother.

My husband thought that they looked good, so I decided to do my own version of these, with a meat sauce and they were delish!

Lasagna Roll-upsI love this recipe because I can put as many or as little in a pan and freeze them!  They are perfect for a small family, empty nesters or someone who is alone.

Ingredients
  1. 1 pound package dry lasagna noodles
  2. 1 pound hamburger or turkey burger
  3. olive oil
  4. 3 cloves garlic, minced
  5. 4 cups spaghetti sauce
  6. 2 cups mushrooms-chopped
  7. 32 ounces ricotta cheese (or cottage cheese or combination of the two)
  8. 2 1/2 cups mozzarella cheese-divided
  9. 1/4 chopped fresh parsley
  10. Grated Parmesan for sprinkling
Instructions
  1. Special equipment: 8 x 4 aluminum foil loaf pans. Four to six pans depending on serving size.
  2. Cook the noodles according to the package instructions. Spray a baking sheet with cooking spray. Drain the noodles and lay out flat on prepared sheet.
  3. For the sauce: Pour a small amount of olive oil in a large skillet. Add garlic and cook for one minute, add the mushrooms and cook for a few more minutes. Remove to a bowl. Add hamburger or turkey burger to the skillet and cook till browned and cooked through. Add spaghetti sauce and bring to a boil. Add mushrooms and garlic back to the pan and heat through.
  4. For the cheese mix: In a bowl, combine the ricotta (or cottage cheese) Parmesan and 2 cups of the mozzarella cheese. Add the fresh parsley. Mix well.
  5. To assemble: Grab a foil loaf pan and spoon in 1/4 to 1/2 cup of the sauce on the bottom of the pan. Lay out 3 or 4 noodles (depending on serving size) and spoon 1/4 cup of the ricotta mix on each and spread evenly. Roll each noodle tightly and place the rolled noodles in the loaf pan on top of the sauce. Top with more sauce and sprinkle with more mozzarella and Parmesan. Repeat with the remaining ingredients. Cook immediately, or cover with foil and freeze.
  6. To cook immediately, bake, uncovered at 350 degrees F. until bubbly, about 25 minutes. To cook frozen, remove the loaf pans from the freezer and bake, covered, at 350 degrees F. for 40 minutes. Uncover and bake until the cheese is nice and bubbly, an additional 10 minutes.
Notes
  1. These are a great way to make individual or double servings for a great freezer meal. I did 4 roll-ups for 2 servings.

 I made 4 pans with 4 roll-ups in each pan.  You could also do 3 roll-ups for a single serving, but 2 each were plenty for us.

Write the baking directions right on the top, then all you have to do is pop it in the oven and you save yourself time in looking up the recipe to see how long you have to bake it!

So yummy!  Add a green salad and a slice of cheese bread and your meal is done!  I now have 3 more meals in my freezer and with the summer months coming up, I know that these will come in very handy!  I used turkey burger, my homemade spaghetti sauce and light cheeses, so that I can eat this on my diet  healthy eating plan.

My husband loved these, so I guess that this recipe is a keeper!

  3. I just watched this episode on the Pioneer Woman a couple of weeks ago in New Zealand. I made some and popped them in my freezer and then today I had to go looking for the heating/cooking instructions. LOVE your idea of writing it directly on the tin foil… I’ll be copying that idea for sure!
