About ten days after my accident, I started to get my appetite back and for some reason a pasta salad sounded so good to me!  My husband was still doing the cooking at that point, so I walked him through how to make it!  There really is no recipe for this salad, but the secret ingredient is the basil!

BBQ Beef Salad Pizza

My husband and I went to a small restaurant awhile back, in Heber City, Utah called the Spin Cafe.  I ordered a version of this salad pizza and it was so good that I wanted to try to duplicate it at home!  I changed it up a bit, by adding cheese to the crust because I think that makes it more like a pizza!

This recipe is perfect for all of these hot summer days!  You only need to heat your oven for a short time and you can use any veggies that you already have or use up some of those fresh veggies from your garden!

Tortellini Salad

I don’t know why I have never thought to make a tortellini salad before!  I love tortellini, but have always thought of it as a hot dish not a cold salad.  Well, I think that I am now hooked!  I have tried a couple of different versions, and I loved both of them!  This pasta is perfect for a salad with the cheese already in it.  You can use the frozen or the dried, whichever you prefer, I have tried both and like them both about the same.

Blackberry and Grilled Chicken Salad

This recipe comes from my SIL.  We had it at a recent family reunion and I fell in love with all the flavors and had to have the recipe!  She was so kind to consent:)  This salad has everything: fruit, chicken, cheese, nuts and tomatoes, then you top it off with a yummy poppy seed dressing that has just the right balance of sweet and tangy!  Sooo Good!
