Caramel Filled Snickerdoodle Cookies

I made some Caramel Filled Snickerdoodle cookies this weekend and Holy Smokes Batman…were they ever good!Caramel Filled Snickerdoodle CookiesSnickerdoodles are not the most photogenic cookies, but these have a wonderful crisp cinnamon outside with a soft chewy caramel inside!  They are perfect for fall weather!

I have a confession to make though…I tried making some Pumpkin Caramel Snickerdoodles that my friend told me about and they were a COMPLETE flop!  They were very sticky and I could not roll them, so I kept adding a little more flour and put flour on my hands to roll them and they were horrible by the time I got finished.  They had too much flour and were a tough, dry cookie dough.  It is the first time that I have ever thrown out and entire batch of cookies and started over!  But they sounded delicious, and I really should try them again sometime when I am brave.  :)

This is my good old stand-by snickerdoodle cookie that I just changed up and they really are delicious!  These cookies also freeze really well…if they last that long at your house.  :)

Ingredients
  1. 1 cup brown sugar
  2. 1 cup granulated sugar
  3. 1 cup shortening
  4. 1 cup butter-softened
  5. 4 1/2 cups flour
  6. 2 eggs
  7. 2 teaspoons soda
  8. 2 Tablespoons warm water
  9. 2 teaspoons vanilla
  10. 1 teaspoon salt
  11. Peter's caramel cut into small bite size pieces, about 1/2" square
  12. 1/4 cup white sugar, plus 1 teaspoon cinnamon-mix together
Instructions
  1. Preheat your oven to 375 degrees F. Mix the warm water and soda together and set aside.
  2. Cream sugars and shortening and butter. Once combined add the eggs, vanilla and water mixture. Add the dry ingredients and mix well. Using a medium cookie scoop, place dough in your hand, top the dough with a piece of caramel. Wrap and pinch the dough to seal around the caramel and shape into a ball. Top with even more (about 1/4 tsp. or a pinch) of the cinnamon sugar mixture for extra flavor and crunch.
  3. Bake at 375 degrees for 10-11 minutes. Remove from the oven and cool before eating. (Caramel centers will be hot)

Caramel Snickerdoodle Cookies
The caramel that I use is called Peter’s caramel.  This a a soft caramel and it is also wonderful for making chocolate caramel apples.  You can find this caramel at Gygi’s.  I usually by two boxes a year.  It stores really good and you can actually melt it down several times.

Do you need a new cookie to try this fall?  This Caramel Filled Snickerdoodle Cookie is going to go in my book as a new favorite.  It is a great spin on an old favorite!  My family loves snickerdoodle cookies and I know that they are going to love this new version too!
