Lemon Fluff

I made this dessert for dinner on Sunday.  It is my husband’s most favorite dessert ever!  I think that I got this recipe from his mom at a bridal shower before I got married, so it has been in our family for many years.  It is a very light refreshing dessert with a graham cracker crust and topping.

Lemon Fluff

3 oz pkg lemon jello

1 cup boiling water

1 cup sugar

1/3 cup lemon juice

1 12 oz can evaporated milk-frozen

15 full graham crackers-crumbed

1/2 cup butter-melted

Pour milk onto a cookie sheet and freeze until ice forms.  Combine jello, water, sugar and lemon juice, stir till it is all dissolved and chill until syrupy.

Mix the graham cracker crumbs with the butter and pat 2/3 of the mixture in the bottom of a 9″ x 13″ cake pan

Beat milk with mixer until it is light and fluffy like whipped cream, gently fold in the jello mixture.   Pour over the graham cracker crust and then sprinkle the remaining 1/3 of the crumbs on the top.  Chill until set.  Cut into squares and serve.  Can garnish with raspberries.

This recipe is perfect for luncheons, showers, bunco, or even to make  your husband very, very happy!

    1. Gwen, thanks for the heads up. I have gone back in and changed the font for the recipe! No, your eyes aren’t going, but apparently mine are! :)
