Oreo Sunflower Cupcakes

Today I have a fun food craft that you can do with the kiddos!  I am back to tending two of my grandkids a couple of days a week and I decided that we needed a project to do.  I still have some limited use in my right arm and hand, but I can cook again, so we decided it would be fun to make cupcakes!

Oreo Sunflower Cupcakes

These are perfect for a summer get together, a party or just for a fun project to try!

DSC_0041Bake your cupcakes and let them cool.  Make the buttercream frosting and tint about 1/4 of the recipe green.  Apply a thin layer of the green frosting to the top of the cupcake and add one regular Oreo cookie to the top or 3 mini Oreo’s if you want small sunflowers.

DSC_0046Color the rest of the frosting a nice yellow color and then take about 1/4 of that frosting and put in a small bowl and add orange coloring.  Put a line of the orange frosting down one side of your frosting bag that has a leaf tip in it.  Fill the bag the rest of the way with the yellow frosting.  This gives that variegated color in your petals.  Pipe petals all the way around the base of the cookie.  Then pipe another layer all the way around on top of the first layer.  (I was having a little trouble with my piping, because of my weak right hand, so I thinned the frosting a bit.  I would not recommend doing that because you want your petals to stand out nicely.  One thing I have learned from my accident is that things do not have to be perfect and even though these cupcakes are not my best work, I think that they are still pretty cute!)  I used a #67 Wilton leaf tip, but when I make them again I will use a larger leaf tip so the petals will be larger.making gumdrop leavesThis is where the kiddos are great help!  Let them roll out gumdrops, or fruit slices in sugar and then cut out leaves with a cookie cutter.  They loved doing this and they worked on the leaves while I piped the frosting!  It was a fun time together!  Just stick the leaves into the sides of the flowers.  We used two on the single flower and three leaves on the mini flowers.Oreo Sunflower CupcakesAnd there you have your sunflower cupcakes!  Aren’t they cute!  I put them in these flower cupcake wrappers and it just topped them off perfectly!

Here is the recipe for the cupcakes and a basic butter cream frosting.  This recipe makes a really moist dense cake and it begins with a cake mix!

For the Cake
  1. 1 chocolate cake mix
  2. 1 cup milk or Half & half
  3. 1 cup butter-melted
  4. 4 eggs
  5. 1/2 cup flour
For the Buttercream Frosting
  1. 1 cup butter-softened
  2. 1 teaspoon vanilla extract (or almond extract)
  3. 3-4 cups powdered sugar
  4. Milk, if needed
Directions for the cake
  1. Mix all ingredients together until smooth. Place cupcake liners into pan and scoop cake mix into the liners with a food scoop. Or fill 2/3 of the way full. This will make about 22-24 cupcakes. Bake at 350 degrees F for 15 minutes or until toothpick inserted in the center comes out clean. Do not over bake! Remove pans from the oven and cool cupcakes on cooling rack.
Directions for the Buttercream Frosting
  1. Beat butter until light and fluffy. Add the vanilla extract. Slowly add powdered sugar until the buttercream is the desired consistency. If it becomes too thick, use a little milk to thin it. Pipe buttercream onto cooled cupcakes.
