Tomato Basil Salad

My post for today may be my best summer salad that I have had yet!  If you love tomatoes like I do, you will definitely want to give this one a try!  It is so full of flavor and yummy goodness that my mouth is watering just thinking about it!

I have these basil plants in a planter just outside of my garage.  They are so pretty with the purple flowers on one and the big beautiful leaves on the others.  They were getting to the point where they needed to be pinched off the tops so that they will grow and bush out more, so that is what I did to get my yummy fresh basil. I have green onions in my garden, so I was set with my ingredients, and I think that the green onions give this salad just the right flavor, not too strong but still good flavor!My tomatoes are not quite red yet, so I bought some grape tomatoes and made this salad.  You could use any tomatoes that you have.

Basil Tomato Salad

2 cups grape or cherry tomatoes-halved (if you use whole tomatoes, cut up and drain off the juice)

3-4  green onions sliced

2 tablespoons chopped fresh basil

1 tablespoon olive oil

4 teaspoons red wine vinegar

1 teaspoon sugar

salt, pepper and minced garlic to taste

Place cut tomatoes, onions and chopped basil in a bowl, mix gently.  In a small jar with tight-fitting lid, combine remaining ingredients; shake well. Pour over tomato basil mixture and  stir.  Cover and refrigerate for at least 1 hour.

I sprinkled with additional kosher salt and pepper before serving.

This salad is even better the next day when all those flavors have totally blended together!This would also be a great Bruschetta to put on bread.  Just cut the tomatoes up a little bit finer.  But since I have been trying to be just a little bit good on my eating, I will make this as a salad without the bread! :)

  2. A lot of my cherry tomatoes are starting to turn red, so I’ve been looking for some other way to eat them other then by themselves or on a salad. This sounds so refreshing and delicious! I’m pinning these for later:)
