Tortellini Salad

I don’t know why I have never thought to make a tortellini salad before!  I love tortellini, but have always thought of it as a hot dish not a cold salad.  Well, I think that I am now hooked!  I have tried a couple of different versions, and I loved both of them!  This pasta is perfect for a salad with the cheese already in it.  You can use the frozen or the dried, whichever you prefer, I have tried both and like them both about the same.

Homemade Bottled Spaghetti Sauce!

I think that I am done with all of my canning for this year.  I have done Blackberry Jam, Frozen corn, Spaghetti Sauce, and bottled peaches.

My favorite thing to have on hand is this wonderful spaghetti sauce.  A lot of people bottle tomatoes and then add a dry mix later to make their sauce, but I love the taste of this already made spaghetti sauce with all those wonderful flavors cooked together for hours and blended together!  I use this for spaghetti, of course, but also ravioli, tortellini, lasagna, and it makes a great pizza sauce! Bruschetta

One of the dishes that my daughter made for our Super Bowl  meal was Bruschetta.  It tasted so good in the middle of the winter.  Of course it tastes better with home grown tomatoes in the summer, but hey we’ll take what we can get!  I love the tomatoes, garlic and basil flavors in this scrumptious appetizer!  Doesn’t it look good enough to just eat with a spoon?  (And maybe I did or did not do that!)

LeeAnn’s Salsa

I had a little Girls Night Out with my cute girls. We made a fun Halloween craft that I will post next week.  But while everyone was here, we had to eat of course!  We had chips and homemade salsa which is always a favorite also fruit and carmel dip and yummy pumpkin cupcakes with carmel frosting.  I can feel fall starting to come in the air, and carmel and apples and pumpkin are the smells and tastes that come with it!

This recipe is from my sister and the secret ingredient is the green onions!  They make it taste sooo good!  If you are looking for a way to use up all those tomatoes and peppers from your garden you should really give this recipe a try!

Bottling Tomatoes

My sister and I went to dad’s to help him bottle tomatoes.  He grows a large garden every summer with corn, tomatoes, peppers, asperagus, rhubarb, and now has started berry bushes. He  usually has enough for all of us to bottle.!  So that is a pretty good trade-off for us anyway, he does all the work in the garden and we spend a morning with him canning!.

First you start with some good ripe tomatoes, picked right fresh out of the garden.

After you wash them you put them into scalding water till the skins split, then the skins will just slip right off.  No messy peeling.

Then cut up the tomatoes and add a little water, sugar and salt and let them simmer for 5-10 mins

Then put the tomatoes into clean canning jars with lemon juice, add lids and process for 45 mins.

Then just have a little fun!
