I still had a few lemons in my fridge from when I made these Blueberry Lemon Muffins, so I decided that I had better use them up. (And since my fridge is still clean and organized, I can see what I have and what I need to use up, so my organizing is paying off already!)
My husband and I used to love to go to Marie Calendar’s, when they had one here locally and my favorite pie of all time was the sour cream lemon pie! I found this recipe and it tastes very similar to the Marie Calendar one and it was pretty easy to make, so I will now be adding this recipe to my collection!
Sour Cream Lemon Pie-adapted from Taste of Home
Ingredients:
Baked Pastry shell (I used my Never Fail Pie Crust recipe)
1 cup sugar
3 tablespoons + 1 1/2 teaspoons cornstarch
1 cup milk
1/2 cup fresh squeezed lemon juice
3 egg yolks, slightly beaten
1/4 cup butter
grated lemon peel of 1 lemon
1 cup sour cream
1 cup whipping cream
2 tablespoons powdered sugar
1/2 teaspoon vanilla
Bake pie shell according to directions. Set aside and let cool.
In a large heavy saucepan, mix sugar and cornstarch. Whisk in milk and lemon juice until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat to low; cook and stir 2 minutes longer. Remove from heat. In a small bowl, whisk a small amount of the hot mixture into the egg yolks; return all to the pan, whisking constantly. Bring to a gentle boil; cook and stir 2 minutes. Remove from heat. Stir in butter and lemon peel. Cool without stirring.
Stir in sour cream. Add filling to crust.
Whip cream until stiff peaks form. Add powdered sugar and vanilla. Top pie with the whipped cream. I spread a layer of whipped cream over the top of the pie, then put the rest of the cream in a frosting piping bag with a star tip and piped the border around the edge of the pie and a dollop in the center, then sprinkle a little bit of lemon zest on the top. Oh so pretty!
This really does taste a lot like the restaurant pie and I was delighted with how pretty it was! It is a very light refreshing dessert, a perfect way to end any spring or summer dinner!
