Chocolate Butterscotcheroos

Summer is here and so now it is officially the quick, easy to make, no bake season!  This is the time of year that I look for recipes that require little time and effort to make and this recipe fits the bill perfectly.  I don’t know who named this recipe, but I have been making it for my family for many years!  There are a lot of variations of this recipe but I love this one because it is a chewy, yummy, chocolately, peanut buttery, bliss in every bite treat!  So if you need a quick snack to fix for your family this summer you really should try these Chocolate Butterscotcheroos!

Chocolate Butterscotcheroos
1 cup white syrup
1 cup white sugar
Boil together in a large pot and add
1 cup peanut butter.  Sir till PB is melted.
Add 6 cups rice crispy cereal.
Stir well and press into a 9 x 11 cake pan that has been sprayed with a cooking spray.
Melt 1 10 oz. package of chocolate chips and
1 10 oz. package of butterscotch chips together and spread over the top.
Let it set up and cut into bars and serve.

So easy and so yummy. This is a great recipe for the kids to help you make, and what kid doesn’t love to help in the kitchen when it is a fun treat?  It is  perfect for summer snacking, picnics, BBQ’s, ballgames, etc.  Easy to make and easy to transport right in the pan!  So what are you waiting for, let’s go make some Chocolate Butterscotcheroos!

Mini Strawberry Donuts

I had a couple of cute little helpers at my house yesterday, so I decided that it would be a good day to make mini donuts.  I wanted to try a new kind…Strawberry.  So I just kind of made up a recipe, they turned out OK, but I wish that I had added more strawberries or at least some kind of strawberry flavoring.  But they got eaten pretty darn fast, so I guess that no one else cared that they didn’t have more strawberry flavor!

Strawberry Shortcake

My husband and I have been gone on vacation for the last week or so and now it is time to come back to reality and the real life.  Ugh.  We had a great time in Sunny Arizona and enjoyed many fun activities like spring baseball training, shopping, sunny skies, shopping, eating out, shopping, going to the fruit stands, shopping…OK I think you get the picture!  I will do a post later about some of my fun finds!

But I had a major computer disaster and ended up buying a brand new computer when we got home!  It is a pain trying to re-load everything onto a new computer, but it is so fun to have a new, clean, faster computer!  So now this is my first post on my new computer and it is great.

My husband and I have made this trip to AZ every year now for about 7-8 years.  It is something that we both look forward to.  My husband loves all the Spring Training baseball games and I love being in the warm (hot) weather so it is a great match!  We have gotten so that we know the area pretty good and are learning all the road names and how to get around the Phoenix area.  One of my favorite places to go every year is a big fruit market called Superstition Market.  They have so many different fruits and veggies for so cheap it makes my head spin!  I would totally go here every week if I lived anywhere around there!  So I had to load up with all kinds of goodies to bring home. It was great!

One of the things that I brought home was strawberries and so I HAD to make a strawberry shortcake for a birthday that we celebrated on Sunday. This is a fun recipe, using a cake mix that is really easy, but yet looks so pretty!

Chocolate Raspberry Cups

Woot, Woot! My rss reader has had a post teaser on it that I could not seem to get removed, but it is now off!  Yeah!  I think that I might have actually jumped up and down and shouted for joy!

So let’s celebrate with a little chocolate!

I saw these in an ad that came in the mail and I decided to give it a try and see if I could make some on my own. I liked the results and my family loved these!

They are beautiful to look at and oh so yummy and wouldn’t these be a fun little Valentine gift for that special little someone? Continue reading

Peanut Butter Brownies!

For our Super Bowl dinner last night I had all the fixings for sandwiches and the girls brought chips and bean dip, a relish plate with a yummy ranch dip from Landee See Landee Do and bruchetta.  I was in charge of dessert, which I have not been in charge of  for a long time, so I asked my husband what he wanted me to make and these brownies were at his request.  They are a family favorite and they make a large batch!

I cut them into footballs for the Super Bowl. Continue reading

Heavenly Filled Strawberries!

We celebrated a couple of birthdays last night and they were both of the male species so we had grilled hamburgers, potato salad, baked beans and chips in their honor and then I made these wonderful Heavenly Filled Strawberries for those of us of the female species! Although the male species ate just as many if not more than the female.  Not that I was counting! :)

I saw fresh strawberries at the store yesterday and they just looked so good  to my poor fresh fruit deprived soul that I bought them and I knew immediately what I wanted to do with them!  I love this recipe because their is no guilt involved in eating them!  If you are a Weight Watchers person then you will love these because they are zero points!  It doesn’t get any better than this folks!

No Mess Frosting Idea

I made these snowman cupcakes yesterday with a cute way to package them. But today I am going to show you how I made them…

I found this cupcake mix at the grocery store and I decided that I wanted to try them.  I made the cupcakes according to the directions, except I added applesauce instead of the oil. (a weight watchers tip that I use all of the time!)  These cupcakes have a filling in the middle like a “Twinkie” and they are really pretty good, and they come in chocolate also!  This box makes 12 cupcakes, which was perfect for what I wanted.

After the cupcakes cooled I frosted them using this super duper idea I found on pinterest! You really need to take a look at this, because it is AMAZING!  The Mind-Blowing Cake Decorating Tip: how to have mess-free icing bags!  If you hate decorating with icing because of all the mess and clean up then this idea will totally change your way of thinking!

Mind-Blowing Cake Decorating Tip

After I frosted the cupcakes I used orange slices for the nose, (Cut in half) and chocolate chips for the mouth and eyes.  I was going to dip the cupcakes in edible white glitter before putting the faces on, but I totally spaced it.  But they are really cute with the glitter!

Here is my little family of snow people!

Look at how yummy these cupcakes are with the filling in the middle!

Then I put them in a clear 9 oz plastic cup and into a cellophane bag and tied them up.  They are fun for a  little gift to give to your friends, teachers, neighbors, or perhaps even for yourself!  You need a treat every now and again, right?
