Do you need a fun recipe for your Valentine’s Day dinner? Perhaps you would like to make a sweet treat for that special someone! Here is a fun spin on an old recipe! I made mini cheesecake bites and the best part…the crust is refrigerated cookie dough!These were easy to make and they are very pretty too!
- 2-(16.5 ounce) packages refrigerated sugar cookie dough
- 1-(8 ounce) package cream cheese
- 1- (14 ounce) can sweetened condensed milk
- 1/3 cup lemon juice
- 1 tsp. vanilla
- 1-(21 ounce) can cherry pie filling
- For the crust: Preheat oven according to package directions. Grease a mini muffin pan lightly with cooking spray. Add 1 rounded tbsp. of dough to each muffin tin. Bake 7-9 minutes. Cool completely. Center should sink immediately, if not, gently press center to create a cavity. Let cool. (You will need to make 24 cookie cups.)
- For the Filling: Soften cream cheese. In mixing bowl, whip cream cheese until fluffy. Gradually add the sweetened condensed milk, beat until smooth. Add lemon juice and vanilla. Stir until thick. Pipe the filling into the cooled cookie cups with a piping bag. Top with the cherry pie filling. Keep refrigerated.
- Can use other kinds of pie filling for the topping, or you could use fresh berries.
These are perfect for a Valentines Dinner because they are so pretty as well as being tasty! They would be fun for a party because they are bite sized and you do not need any utensils to eat these!
Of course, you could change up the pie filling and use blueberry, blackberry, peach or apple. Or you could use fresh berries and a mint leaf! They would all be delicious!
Mini bites seem to be the “in” thing right now, so these would be perfect in a dessert bar with mini brownies, cupcakes, cake balls and anything else that you can make bite sized!
