My husband and I went to a small restaurant awhile back, in Heber City, Utah called the Spin Cafe. I ordered a version of this salad pizza and it was so good that I wanted to try to duplicate it at home! I changed it up a bit, by adding cheese to the crust because I think that makes it more like a pizza!
This recipe is perfect for all of these hot summer days! You only need to heat your oven for a short time and you can use any veggies that you already have or use up some of those fresh veggies from your garden!
There really is no recipe for this, which makes it even better because you just use up what you have!
You will need to start with a flat bread. You can use any kind that you want. I used a Greek Pita flat bread for this recipe.
Drizzle some olive oil to the top of the bread then add your favorite cheese to the top. I sliced mozzarella cheese very thin for this one. Bake it in a 400 degrees F. oven for about 10 minutes until the cheese is bubbly and starting to brown.
Top with your favorite salad toppings, I used butter crunch lettuce, grape tomatoes and green onions. but you could also add green peppers, basil, cucumbers, raw zucchini or anything else that you might love on your salad! Top with some leftover BBQ Beef, BBQ Pork, grilled chicken or whatever leftover meat you have! Add your favorite salad dressing sprinkle with some kosher salt and freshly ground pepper, and cut the pizza into 4 slices and you are ready to eat! This is such a refreshing, light meal for these hot summer nights!
This is perfect for your kids to each make their own version and they can add the topping of their choice!
So do you need a menu idea for this weekend? You might want to give this one a try! My husband and I both love this recipe and I have made it several times, it is a keeper because you can just use up all those leftover veggies and meat that you have in your fridge!
