It was a chilly, blustery night last night, so I decided that it was the perfect night for a warm bowl of Creamy Broccoli Soup and some warm homemade bread! Are you hungry yet? This recipe is one that I was given many years ago from a dear friend. It is so good and and it is good for you too!
- 3 chicken bouillon
- 2 cups hot water
- 1 onion-chopped
- 1 bunch broccoli cut up
- 2 carrots grated
- 1/4 cup butter-melted
- 1/2 cup flour
- 1/2 tsp dry mustard
- salt
- pepper
- 2 cups milk
- shredded cheese-optional
- Dissolve bouillon cubes in the hot water in a pan. Add chopped onion and broccoli and cook until tender, about 5 minutes. Add grated carrot into it. In another small pan make a roux with the melted butter, add flour and dry mustard and stir all together. Gradually pour in the milk while whisking. Cook until thick. Blend the roux and the veggies together. Season with salt and pepper. Serve with grated cheese on the top.
- Can add bacon bits to the toppings if you like.
I made homemade bread to go with this Creamy Broccoli Soup and we had a bowl of fresh fruit to round out this wonderful winter meal! Did I tell you that I am crazy about fresh fruit? I try to have it with at least one meal every day! Thank goodness that I live close to a Costco store because they always have the best fruit! I cut up a fresh pineapple and added grapes with it. I love pineapple and raspberries or pineapple and mandarin oranges too! I’m a little bit of a nut with my fruit! :)Do you have a favorite meal that your family loves…do you turn to it time after time? I love to make soups in the winter and I am lucky that my husband loves soup as much as I do! It is a great nutritional meal that is not too heavy but it fills you up! I like recipes like this one that call for ingredients that I usually have on hand.
