This time of year just screams out pumpkin to me!
I love pumpkin pie, but it is a special treat and so I only eat it a couple of times a year! But I love Pumpkin Pie Cake, pumpkin roll, Chocolate chip pumpkin cookies (which I had to make a couple of days ago!) and these Mini Baked Pumpkin Spice Donuts.
These are so easy to make because they are baked! If you happen to have a babycakes donut maker it is fun to make the mini donuts, that way you can eat two (or three) and not feel guilty, right?
- 1/2 cup canola oil (I used a little less)
- 3 eggs
- 1 1/2 cups canned pumpkin
- 2 1/2 cups sugar-divided
- 2 1/2 teaspoons pumpkin pie spice-divided
- 1 teaspoon salt
- 1 1/2 teaspoons baking powder
- 2 cups flour
- 1/2 cup butter-melted
- 1 teaspoon cinnamon
- 1.Preheat the oven to 350 degrees F.
- 2. Spray two donut pans with cooking spray.
- 3. Beat together the oil, eggs, 1 1/2 cups sugar, pumpkin, 1 1/2 tsp pumpkin pie spice, salt and baking powder until smooth.
- 4. Add the flour and stir just until combined and smooth.
- 5. Fill the wheels of the donut pans about 3/4 full.
- 6. Bake the donuts for 15-18 minutes or until light brown.
- 7. Remove the donuts from the oven and let cool for about 5 minutes, then transfer to a cooling rack to cool.
- 8. Melt butter.
- 9. In a separate bowl combine 1 cup sugar, 1 teaspoon pumpkin pie spice and 1 teaspoon cinnamon.
- 10. Roll donuts in butter and then toss in the sugar/spice mixture.
- 11. Let cool or enjoy warm!
- If using a babycakes donut maker, bake for 2-4 minutes and remove from pan immediately to a cooling rack. After they are all baked, dip them in the butter and sugar/spice mixture.
