I had a couple of cute little helpers at my house yesterday, so I decided that it would be a good day to make mini donuts. I wanted to try a new kind…Strawberry. So I just kind of made up a recipe, they turned out OK, but I wish that I had added more strawberries or at least some kind of strawberry flavoring. But they got eaten pretty darn fast, so I guess that no one else cared that they didn’t have more strawberry flavor!
I cooked these in my little “Baby Cakes” donuts maker, but you could also bake them in a donuts pan. I put the batter in a disposable icing bag to fill the pan, it works so good and then I just throw the bag away when I am done and there is very little clean up!Because I had these two cute helpers here, I did a really super shortcut for the frosting. I used a can of frosting, put it in a bowl and microwaved it for 30 seconds to make it warm so that I could just dip the donuts in! Then these two went to work with the sprinkles! Look at how serious they take their work! Don’t you wish all employees were this dedicated! :)They look so festive here and would be great for Easter, but there is not a prayer that they would ever last until then!Strawberry Donuts
1 1/3 cups flour
1/2 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup milk
1/4 cup vegetable oil
1/4 cup sour cream
1 egg
1 teaspoon vanilla (I would add some kind of strawberry flavoring: extract, jam, I think even some jello would add good flavor!)
1 cup frozen strawberries, blended into a puree.
Combine dry ingredients in a mixing bowl. In separate bowl whisk together remaining ingredients. Pour liquid mixture into dry ingredients, using mixer on medium speed, blend until smooth. Fill each donut space with about 2 tablespoons of batter and bake for 4-5 minutes in “Baby Cakes” donuts maker. If baking in oven, bake at 350 degrees until a toothpick inserted into donut comes out clean. Remove to wire rack and let cool.
Glaze or frost:
1/4 cup melted butter
1 1/3 cups powdered sugar, sifted
1 teaspoon vanilla
1 to 1 1/2 hot water
Combine butter, powdered sugar and vanilla. Add a little bit of the hot water, if needed to make a frosting consistency. For glaze style, increase the hot water to 2 to 2 1/2 tablespoons. Dip donuts in warm frosting.
Quick and Easy Frosting:
Spoon 1 tub of frosting into a microwavable bowl. Microwave on high power for 30-40 seconds or until warm. Dip donuts in warm frosting.
These are a fun, easy little treat and would be great for any party or get together. They would also be a great little gift idea for neighbors or friends! You can decorate them differently for any occasion!
