Have you seen these recipes all over blog land lately? They all look so delicious that I decided that I would like to try one of them and see what all of the fuss is about. I like ice cream, but I usually only need a taste or two to be satisfied. This recipe is so rich and decadent, that it kept me going back for more!
The recipe is very simple with only a few ingredients, plus your mix-ins. Recipe adapted from Annie of Annie’s Noms
- 2 cups heavy cream
- 1-14 oz can of sweetened condensed milk
- 1 tsp. extract (vanilla, almond or mint)
- 1 tablespoon brown sugar
- 2 cups mix-ins I used one cup each-fresh raspberries and peaches
- Put the heavy cream into a large mixing bowl and beat until soft peaks form. (You want the cream to just hold shape for 5 seconds when you pull the beaters out) Add in the sweetened condensed milk and the extract and mix on slow until just combined. Add the brown sugar for extra sweetness. Add in the fruit (*or other mix-ins) and fold by hand, just until they are covered, DO NOT over mix. Pour into loaf pan or 9 inch square pan. Cover with cling film and place in the freezer for 6-8 hours, until frozen through. Ice cream will keep, covered, in the freezer for 1 month.
- *Other mix-in ideas: chocolate syrup, chocolate chunks, chopped candy bars, crushed cookies, bananas, apricots, cherries, (any fruit that will freeze well) nuts, coconut, sprinkles, etc. Let your imagination run wild here!
I put my ice cream in a 9 inch square pan and covered it with cling wrap:
The hard part about this ice cream is waiting for it to freeze!Doesn’t this just make your mouth water? Look at those chunks of delightful fruit in there!Do you need a fresh dessert for dinner tonight, or perhaps you have a fun party or get together that you are planning. This ice cream is perfect for any occasion. You can mix it up in the morning and it will be ready to go that night! It really doesn’t get much easier than this to make yummy ice cream… and without the mess of the ice cream maker!
