My husband and I went to a new little Bakery/cafe in South Jordan, called Schmidt’s Pastry Cottage and it was so good that we both said that we had just found a new favorite place to eat! It is mainly a bakery with a little cafe on one side of it. They have 3 other locations in Utah and just added this one in South Jordan. They specialize in cakes and pastries and all of the pastries looked so good!
I ordered this turkey panni sandwich and I loved it and the meals come with either an eclair or a brownie! You can’t beat that!
So this week I decided that we need to have Panni’s for dinner one night. I love these Torta rolls that you can get at Costco.You do not have to have a panni press to make these sandwiches, you can just use a griddle or I have even used my waffle iron when we are up at the cabin! You can just press down on the sandwich with a spatula to flatten it while cooking. If you do use your waffle iron be careful not to push down too hard, I felt my handle bending a little bit and had to let up on the pressure. :)
You can use any filling that you like, turkey, ham, chicken, pastrami, pepperoni, chicken salad etc. also use any kind of cheese that you prefer like cheddar, mozzarella, American, provolone, Swiss or pepper jack.
Put your meat on the roll, then add the cheese to just one side so that when it is done cooking you can open it up to add the condiments and veggies. Grill the sandwich until the cheese is melted. Then open up the side without the cheese on it and add any condiments like mayo, pesto, spicy mustard, ranch or anything that floats your boat. Then add as many or as little veggies that you like. I like LOTS of veggies but my husband is more of a lettuce, pickles and sometimes onion kind of guy.
I just did a simple ham and cheese sandwich this time but with all the veggies on it, it tasted super yummy! I also love pesto on my sandwiches, it gives it so much flavor!
So give these sandwiches a try, they are fun to make because you can special order just what you want! (but that is because you will probably be the one making it!)
And by the way, I did buy a bag of these frozen orange rolls at Schmidt’s and they are wonderful, they are light and have just the right amount of orange in them! I like that I can bake just a few at a time or the whole 2 dozen! They have an orange frosting that you can buy to add to the top! Delish!
If you are ever in this area, you really need to try out Schmidt’s Pastry Cottage, I think that you will not be disappointed!
