My husband and I went to our cabin last weekend and we went for a ride on Saturday morning to a hunting property not too far away. I could not believe how beautiful of a fall day it was! The sun was shining and the air was clear with a little bit of a crisp bite to it. I don’t know if there is a season more beautiful than fall!
Today I have a cupcake that compliments this beautiful fall season! It has the wonder flavor of fresh apples, the sweetness of caramel and the greatness of the salt added to top it all off!
I found this recipe on a blog somewhere, but I cannot find it anywhere. If anyone knows the source of this recipe I would love to know it so I can give them the credit!
- 1 box white cake mix
- 3 eggs
- 3 oz apple sauce
- 2 tablespoons caramel sauce
- 3 teaspoons cinnamon
- 1/4 teaspoon nutmeg
- 1 cup water
- 1 large apple peeled and chopped
- 1 large apple
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 4 tablespoons butter
- 2 tablespoons milk mixed with 2 tablespoons corn starch
- 2 teaspoons vanilla
- 1 cup butter-softened
- 4-5 cups powdered sugar
- 3-4 tablespoons milk
- 1/4 cup caramel syrup
- 1 teaspoon salt
- Sprinkles-(optional)
- Preheat oven to 350 degrees F.
- Line cupcake pans with paper liners.
- Peel and chop large apple
- Combine all ingredients, mix on low to combine for about 30 seconds. Then mix on medium speed for 2 minutes.
- Fill each cupcake liner 2/3 full of batter.
- Bake 16-18 minutes, until toothpick comes out clean.
- Allow to completely cool.
- Peel and chop 1 large apple.
- Combine both sugars, butter, vanilla and apple in a saucepan on medium heat. Stir occasionally.
- When butter and sugars have melted and combined, add the milk and cornstarch mixture and blend well.
- When it reached a boil, stir constantly and boil for 4-5 minutes until apples are softened.
- Allow to completely cool.
- Use a cupcake or apple corer and remove about 1 inch of the center of each cupcake.
- Fill each center with about a tablespoon of the caramel apple mixture.
- Whip butter until it is light and fluffy.
- Add 2 cups of powdered sugar and mix.
- Add caramel sauce and salt.
- Add 2 cups more powered sugar.
- Add milk 1 tablespoon at a time.
- Beat for 4-5 minutes, scraping down sides to whip the frosting light and fluffy.
- Check consistency and if too runny add more powdered sugar. Then, beat to make light and fluffy.
- Pipe frosting on cooled cupcakes. Add sprinkles if desired.
