If you are on a diet or trying to eat better foods, you will not want to read this post!
These potatoes truly live up to their name and they are so good that they “should be illegal,” as my husband would say! :) My friend, Kathy, told me about this recipe. She found it on a Pioneer Woman cooking show, but I could never find the recipe, so I just made one up! As many of you know, the Pioneer Woman uses a lot of butter and cream and that is exactly what makes these potatoes to die for!
To make these little potato delights, cut a sheet of heavy duty tin foil large enough for one serving. Cut up one serving of potatoes into chunks. I used Yukon Golds, but you can use any kind of potatoes that you like. Dice some onions and parsley and sprinkle with salt and pepper and paprika. Add one pat of butter to the top. I used a scant tablespoon.
Then if that is not sinful enough, pour heavy cream on the top of the potatoes! Wrap them up to seal all that goodness in and bake them or cook them on your grill.
This what I did last Sunday when everyone was here for Father’s day and guess what?! I burnt them to crispy critters…I am talking black! I was so excited to try these and they were awful. So if you are doing these for a big group, I recommend that you bake them in the oven, or you keep a better vigilance than I did with the grill. I think that I just had way too many packages on there and the air could not circulate like it should have!
My friend had told me how delicious these potatoes were, so I decided to give them another try with just my husband and I…and I am so glad that I did. We both absolutely loved them, but why wouldn’t we with all that butter and cream?!
When I made them the second time I added fresh rosemary, chives and green onions from my garden along with salt and pepper and season-all salt. I love rosemary and I think that is what put these over the top for me! I served these with some leftover pork roast and I found myself licking up all of that sauce with the meat! I did not want to let any of it go to waste! (but I am sure that it will eventually go to waist!)
If you are in need of a great side dish…you really should try these out! They are amaaazing!
- 1 potato per serving
- minced onions-can use yellow, red, or green onions
- fresh herbs chopped- such as parsley, rosemary, chives, etc.
- salt
- pepper
- seasonings- can use any of your favorites- season-all, paprika or garlic powder
- 1 tablespoon butter
- 1/4 cup heavy cream
- Place a sheet of heavy duty tin foil out on counter. Cut potatoes into chunks and place on tin foil along with the minced onions. Add your favorite seasonings and fresh herbs. Wrap foil up tight and bake in 350 degree oven for 30- 45 minutes or until potatoes are tender.
- You can also cook these on the grill. I would double wrap them in tin foil to prevent burning.
If you are in need of a side dish for your next BBQ or dinner with the family, these will truly fit the bill. I think that your taste buds and your guests with thank you!
Potatoes are wonderful, I’ve never tried a recipe quite like this one.
Do you place the wrapped potatoes in a deep dish to avoid leaking? Or do you put them on the oven rack and put a dish beneath them?
I just put the packages of tin foil right on the racks in the oven. Just be sure to seal them good when you are wrapping them. I did not put anything under them and I did not have any leakage problems.
