OH MY HEAVENLY GOODNESS!
I saw a picture of this Strawberry and Toasted Almond Chocolate Bark out there in Pinterest land and I just had to give it a try! Let’s just say it ruined the heck out of my diet! I could not stop taking a bite every time I walked by it.It has freeze dried strawberries that gives it a wonderful tartness and then toasted almonds for a delightful nuttiness! Combined with the chocolate…it is heavenly!
- 2 cups chocolate chips or melting chocolate
- 1 cup whole almonds
- 1 cup freeze dried strawberries
- Preheat oven to 350 degrees F. Spread almonds on a baking sheet and place in oven for 5 minutes. Remove baking sheet from oven and stir almonds, return to oven for another 3-5 minutes or until almonds are slightly darker in color. Remove from oven and let cool.
- Place chocolate in a microwavable bowl and place in microwave for 1 minute at 50 % power. Stir and keep heating in 15 seconds intervals until completely melted. (Be careful to not burn chocolate)
- Reserve 1/8 cup each, of the strawberries and the almonds, set aside. Mix the rest of the almonds and the strawberries into the chocolate and stir until coated. Spread the candy out on a cookie sheet that has been lined with parchment paper or waxed paper. Quickly sprinkle the remaining strawberries and almonds on the top. I pressed them into the chocolate a bit. Let chocolate harden and break into pieces
- You can find freeze dried strawberries in the food storage aisle of your grocery store, or at Trader Joe's.
I spread it out on a large cookies sheet lined with parchment paper.After the chocolate has set, you can break it into bite size pieces. I kept telling myself that this Strawberry and Toasted Almond Chocolate Bark was good for me with all the freeze dried strawberries and the wonderful almonds…I almost had myself convinced…almost! :)But here I am, eating another piece!This is great to wrap up in a clear box or a bag to give away to someone you love. Did you use raw or roasted almonds? Salted or???

Saundra, I toasted my almonds, they are not raw to begin with, they are just whole almonds that are not salted. Hope this helps. This bark is one of my most favorite ones! I cannot make it, unless I have lots of people here to help me eat it or I will eat the entire batch! :)
