Strawberry Lime White Chocolate Cupcakes!

We had our March Birthday dinner yesterday and I was assigned to make dessert so this is what I came up with! 

This might be a new favorite now!

These cupcakes are loaded with flavor and they are beautiful to boot!

This recipe is adapted from “Your Cup of Cake”.  I changed the cake part quite a bit and added the white Ganache. 

 

Strawberry Lime White Chocolate Cupcakes

Lime Cupcakes
  1. 1 box white cake mix
  2. 4 egg whites
  3. 1/3 cup melted butter
  4. 3/4 cup half and half or milk
  5. 1/4 cup lime juice
  6. 1/4 cup sour cream
  7. Zest of one lime
White Chocolate Ganache
  1. 1 cup white chocolate chips
  2. 1/4 cup cream
Strawberry Frosting
  1. 1/2 cup butter-softened
  2. 8 oz. cream cheese-softened
  3. 1 tsp. vanilla extract
  4. 4-5 cups powdered sugar
  5. 2-4 Tablespoons strawberry puree
  6. 2 tsp. strawberry flavored gelatin
  7. fresh limes slices for decoration-optional
Instructions
  1. Preheat oven to 350 degrees F. and line pans with cupcake liners.
  2. Sift cake mix into a small bowl; set aside.
  3. In a large mixing bowl, use a whisk to gently combine egg whites, melted butter, half and half, lime juice, sour cream and lime zest.
  4. Add cake mix; stir until smooth.
  5. Fill cupcake liners 3/4 full. (I use a food scoop) and bake for 17-22 mins. or until a toothpick inserted in the center comes out clean. Do not over bake.
  6. Let cool on rack.
White Chocolate Ganache
  1. Melt white chocolate chips and cream in microwave for 15 seconds. Remove and stir.
  2. Continue to microwave until smooth, stirring every 15 seconds. Be careful not to burn the chocolate.
  3. Dip the top of your cooled cupcakes and place on rack for the chocolate to set.
Strawberry Frosting
  1. Beat butter and cream cheese until smooth, about 2 minutes. Scrape down the bowl, add the vanilla extract and beat again. Slowly add powdered sugar, one cup at a time until frosting is a little thicker than desired. Slowly add strawberry puree (fresh or frozen strawberries that have been pureed in a blender) until frosting reaches desired consistency. Add strawberry gelatin for additional flavor and color.
  2. Pipe onto dipped cupcakes and top with a slice of lime if desired.
