Corn Tomato Avocado Salad

I have the perfect garden meal, it is this Corn Tomato Avocado Salad!

And even if you don’t have a garden, it is the perfect summer meal!This salad is so full of flavor and it is good for you too!  You can add veggies from the garden or from the farmer’s market!

It is easy to put together and it tastes as good the second day as it did the first day!

Ingredients
  1. 1 cob of corn- corn kernels steamed and cut off the cob
  2. 1 medium avocado- diced
  3. 1-2 cups cherry tomatoes- halved
  4. 3 green onions- sliced
  5. 2 teaspoons olive oil
  6. 2 tablespoons lemon juice- from 1 medium lemon
  7. kosher salt
  8. fresh black pepper to taste
Instructions
  1. Toss all ingredients together and serve. Enjoy
Notes
  1. Can add diced cucumbers, or use red onion in place of the green onions.

Did you know that if you are only using half of an avocado that you can save the other half for another day?  All you need to do is leave the pit in the half you are saving and put it in a baggie in the fridge for another day.So that is my Corn Tomato Avocado Salad.

  1. I love this salad. I make it every summer, but I do not steam the corn. I just wash and cut off the cob. I prefer lime over lemon, either is great! Delicious!!!

    1. Pat, I have seen several variations of this salad and that is what I love about it…you can change it up just a little bit every time for a totally different salad!! :)
