I hope that everyone had a great Mother’s Day weekend! We had rain ALL day on Saturday, (which we need, so it was great!) it was a perfect day to stay inside and work on some of my sewing projects! Then the sun came out on Sunday and it was a beautiful day!

I used to make these brownies a lot when my kids were younger and I have not made them for years now…but I thought that they would be a great treat for my “Sugar Sunday”. (I am trying to only eat sugar one day a week and it is on Sunday, so my friend and I have started calling it “Sugar Sunday!)
These are a wonderfully SWEET treat, with the chewy brownies on the bottom, the layer of marshmallows in the middle and a sweet chocolate frosting on the top.
- 1 cup butter, softened
- 2 cups sugar
- 1/3 cup cocoa
- 4 eggs
- 1 1/2 cups flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 2 teaspoon vanilla
- 1 (10 ounce) package miniature marshmallows
- 1 cup chopped nuts (optional)
- 1/2 cup butter, softened
- 1/4 cup milk
- 1 teaspoon vanilla
- 3 tablespoons cocoa
- 2-3 cups powdered sugar
- Preheat oven to 350 degrees F. Grease a 10 x 15 baking sheet.
- Cream butter and sugar. Add eggs and mix well. Sift dry ingredients and add to mixture. Add vanilla and nuts (optional). Spread in prepared pan. Bake for 25-30 minutes or until a toothpick inserted in the center come out clean. Remove from oven and cover top of the brownies with the miniature marshmallows. Return to oven for 3 minutes or until the marshmallows are soft and puffy. Cool and frost with frosting.
- Beat all ingredients with an electric mixer until smooth. Add more powdered sugar or milk if needed to reach the right consistency.
