Swedish Tea Cakes

Yesterday I talked about all the different Christmas candies that I used to make with my mom when she was still here.  Today, I have a cookie recipe that I am sure a lot of you have made, but it is one that we used to make all the time just for Christmas!  These fun little morsels are so pretty on a plate and I am sure that is why my mom made them all of the time; they just look festive!

Some of you may know them as “Thumb print cookies” but my mom’s recipe is called Swedish Tea Cakes and I think that they look just like a fun little tea party!

Swedish Tea Cakes

Ingredients
  1. 1 cup butter-softened
  2. 1 cup brown sugar- packed
  3. 2 egg yolks slightly beaten
  4. 2 cups sifted flour
  5. 2 egg whites
  6. 1 cup shredded coconut
  7. jam (I like strawberry or raspberry)
Instructions
  1. Preheat oven to 350 degrees F. Spray baking pan with cooking spray. Place coconut in a small bowl.
  2. Cream butter and sugar. Separate eggs whites into a small bowl. Add egg yolks to butter and sugar mixture and mix until combined. Stir in flour until dough forms a ball.
  3. Roll dough into small balls, dip in egg whites then in coconut. Place on prepared cookie sheet and press in the center of each cookie with your finger to make a well in the center.
  4. Bake for 10-14 minutes, just until the cookie and the coconut are slightly browned.
  5. Press the center of the cookies again for the well for the jam. Cool on cookie rack.
  6. Using a teaspoon, place a small amount of jam in the center of each cookie.
  7. Enjoy!
Notes
  1. You could also roll in finely chopped nuts instead of the coconut.

I think that you can tell that I have baking and candy making on the brain this week.  Have you done all of your Christmas cooking… baking… candy making, yet?  

I need to get the holidays and all this yummy food over with so that I can get back to my diet, but who wants to do that? :(
