Toasted-Pecan Coconut Blondies

I am not sure what it is about the Autumn time…that just makes me want to start baking again!  Maybe it is just the fact the air is cooler now and so I feel like I can turn my oven on again, or that the kids are back in school and I get myself back into somewhat of a routine too, but whatever it is that gets me going, I am thankful for it…because I really do love to bake!  And It just is not fall without recipes that call for pumpkin, apples, or caramel!

Toasted Pecan Coconut BlondiesI love these moist, nutty blondies!  The coconut keeps them moist, the toasted pecans give them the crunchy, nutty flavor and of course the brown sugar give these blondies their sweet caramel flavor!

Ingredients
  1. 1 cup whole pecans
  2. 1 cup all-purpose flour
  3. 1 teaspoon baking powder
  4. 3/4 teaspoon salt
  5. 1/2 cup butter-melted and slightly cooled
  6. 1 cup packed brown sugar
  7. 1 egg, lightly beaten
  8. 1 teaspoon vanilla extract
  9. 2/3 cup flaked coconut
Instructions
  1. 1. Preheat oven to 350 degrees F. Butter an 8 inch square pan. Spread pecans in an even layer in the pan and bake until fragrant and toasted, about 6 minutes, shaking the pan once or twice. Transfer pecans to a cutting board to cool slightly, then chop.
  2. 2 In a small bowl, mix flour, baking powder and salt. In a medium bowl, stir butter and brown sugar until combined. Stir in egg and vanilla. Add flour mixture and stir until just combined. Stir in pecans and coconut. Spread batter evenly in the baking pan that you toasted the pecans in.
  3. 3. Bake until a tester inserted into center comes out clean, 22 to 24 minutes. Transfer to a wire rack to cool completely before cutting into squares.

  1. These blondies are the perfect to make Ala mode!
