A week ago, my daughter sold her house and moved into a rental that my youngest son has. I could not do any of the heavy lifting, so I told her that I would just get her kitchen organized and put together. They had several people coming to help them move, so I decided that I would make a treat to take with me. These bars fit the bill perfectly!
I made a double batch of these bars and put them in a 9 x 13 pan, with some cut up watermelon and bottles of water. It was something they could just grab and keep going!
I adapted this recipe slightly from Our Best Bites.
- 6 cups Rice Krispies
- 1 stick butter (1/2 cup)
- 1/2 cup brown sugar-packed
- 1/4 cup heavy whipping cream
- 1 tablespoon light corn syrup
- 1 teaspoon kosher salt-plus more for sprinkling on top
- 1 10 oz bag of mini marshmallows, plus 1 cup of additional mini marshmallows
- In a large, heat proof bowl, toss together the Rice Krispies and 1 cup of mini marshmallows. Set aside.
- Spray an 8 x 8" baking pan with non-stick cooking spray, set aside.
- In a large, heavy pot, melt the butter over medium-high heat, stirring constantly. When it is melted, reduce the heat to medium-low and add the brown sugar, whipping cream and corn syrup. Cook for about 4-5 minutes, stirring frequently to keep the caramel from scorching. When the caramel is thick and syrupy, add the salt and stir to combine. Remove from heat and add the 10 ounces of marshmallows. Stir until the marshmallows are dissolved. Quickly pour over the Rice Krispies and stir to coat completely. Press into the prepared pan and sprinkle with more kosher salt. Allow to cool completely and then cut into squares.
- You can place in the freezer to cool them more quickly!
I love that these bars use brown sugar and butter to make the caramel sauce. That means that I do not have to unwrap all of those little pesky caramels squares :)…and I always have butter and brown sugar in my kitchen, so I can make these anytime I get the craving for them! :)Do you need a treat to make this weekend?
