Triple Peppermint Ice Cream Pie

Do you need a quick yummy treat for your New Year’s Eve Party?

Well here it is!

I love this peppermint Ice cream from Farr’s and decided that I needed to make an ice cream pie with it.

Here is my recipe:

1/2 gallon peppermint ice cream-softened

9 peppermint chocolate sandwich cookies-crushed (I used Trader Joe’s, but you could use Oreo’s)

1 1/2 cups peppermint marshmallows

Whipped topping-optional

1 chocolate crumb pie crust

Mix first three ingredients all together and pour into the pie crust. Freeze until ready to serve.

Cut with a wet knife for easier cutting.

Top slices with whipped topping and additional cookie crumbs.  You could also add chocolate or caramel sauce to the top along with nuts, cherries or crushed up candy canes.

This is pretty much just anything that you love pie!

 You can use up all of your Christmas leftover candy to make a yummy ice cream pie!

So what kind of pie could you come up with, using some of your leftover goodies?

I am thinking about a caramel, peanut cluster and fudge ice cream,  what do you think?

I guess I had better hurry and make it because the diet starts again next week!  Do any of  you think that way?  I bet not.
