It has been a long time since I have posted a recipe, especially a dessert recipe.
As I said yesterday, my husband had been gone and so I did not do any cooking! It was great for the diet! I lived on canned soup and scrambled eggs. I can honestly diet quite well, when I don’t have to cook for anyone else! :)
But he came back and so I decided to celebrate a bit with a dessert in the middle of the week!
I made these delicious Cherry Cheesecake Cups!
They were a little bit of an experiment, but I loved the way they turned out and they are pretty enough for a party or for a fun Valentines dessert!
So does anyone else want to make some Cherry Cheesecake cups?
Here is the Recipe:
Cherry Cheesecake Cups
1/2 cup flour
1 cup sugar-divided
1/2 cup finely chopped nuts (I used pecans)
1/2 cup flaked coconut
4 Tablespoons butter
1- 21 oz can cherry pie filling
1- 8 oz package cream cheese (I used fat free)
2 eggs
1 teaspoon almond extract (I used a little more because I love the taste of almond!)
Combine the flour, nuts, coconut, butter and 1/2 cup sugar until crumbly. Press 2/3 of the crumbs divided into bottom of 12 lined cupcake pan. Beat cream cheese, eggs, almond extract and remaining 1/2 cup sugar together until smooth. Divide evenly over the crusts. Bake at 350 degrees F. for about 20 minutes or until toothpick inserted in the middle comes out clean. Remove from oven and spoon cherry pie filling on top of each cup. Sprinkle with remaining crumb topping. Bake an additional 10-12 minutes or until crumb topping is golden brown. Cool on wire rack.
Can serve with whipped cream. Enjoy!

This picture is making my mouth water! I think I might need to go in the kitchen and have another one! Which is why I cannot make yummy desserts and be on a diet too! I have very little willpower! Maybe I need to go back to the canned soup and scrambled eggs!
But you need to try these little babies out and see how your willpower holds out!
These look delicious. I love smaller versions of desserts because I it is easier to portion and serve to people.
