Summertime Ice Cream Balls

This is the perfect dessert for your next BBQ, 4th of July Party or just for a fun dessert for your family!  The reason that it is perfect is that you make it ahead of time and then just take out of the freezer, add your toppings and serve!  

This is so yummy with the crunchy outside full of cinnamon and the creamy ice cream in the middle!  This resembles fried ice cream but without all the fried mess or extra calories!

Summertime Ice Cream Balls

A make-ahead dessert with a crunchy cinnamon coating and a creamy ice cream middle.

Ingredients
  1. 1 quart vanilla ice cream
  2. 2 1/2 cups frosted corn flakes cereal, coarsely crushed
  3. 1 tablespoon butter, melted
  4. 1 teaspoon ground cinnamon
  5. caramel topping
  6. whipped cream (optional)
  7. chopped nuts (optional)
Instructions
  1. Line a rimmed baking sheet with wax paper or parchment paper. With a large spoon or an ice cream scoop, form eight ice cream balls, each about 2-1/2 inches in diameter. Place on baking sheet then place in freezer for about 1 hour.
  2. Preheat oven to 350 degrees F.
  3. Meanwhile, coat another rimmed baking sheet with cooking spray. In a medium bowl, combine frosted flakes, butter and cinnamon; mix well and spread on baking sheet. Bake 5 to 7 minutes, or until lightly browned and crisp. Remove to a shallow dish and allow to cool completely.
  4. Line another rimmed baking sheet with wax paper or parchment paper. Remove ice cream balls from freezer and roll in cereal mixture, coating on all sides. Place on baking sheet and freeze 2 to 3 hours, or until ice cream is firm.
  5. Drizzle with caramel topping and top with whipped cream and nuts if desired, before serving.
Notes
  1. Optional: Could also add chopped nuts to the crunchy coating.
