Cookies and Cream Cupcakes

As many of you know that follow me right now…I am trying to cut out the sugar and sweet treats except for one day a week.  I usually make a dessert on Sundays and this is what I made last Sunday!cookies and cream cupcakesThey are so yummy with the crushed up cookies in the fluffy frosting and they have a special treat in the cupcakes…a whole cookie in the bottom! 

There are lots of recipes for these cupcakes out there in blog land, but I chose this one from Lil’ Luna because it only makes 12 cupcakes and I wanted to try this frosting with marshmallow cream in it!  I was not disappointed! I made a couple of alterations in this recipe, but for the most part  it is the same.   My husband and I both loved these cupcakes and I will definitely keep this recipe.  I gave a plate of them away, so they would not be tempting me!

For the cupcakes
  1. 12 Oreo cookies
  2. 1 1/2 cups flour
  3. 3/4 cup sugar
  4. 1 1/4 teaspoons baking powder
  5. 1/2 teaspoon salt
  6. 1/2 cup butter, cold, cut into small pieces
  7. 2 eggs
  8. 3/4 cup milk
  9. 1 teaspoon vanilla
For the Frosting
  1. 3.5 ounces marshmallow creme (1/2 of 7 ounce container)
  2. 1/2 cup butter, softened
  3. 2 1/2 cups powdered sugar
  4. 1 teaspoon vanilla
  5. 1-2 tablespoons cream
  6. 10 Oreo cookies, finely crushed, plus additional Oreo's for garnish
Instructions
  1. 1. Preheat oven to 350 degrees F. Line 12 wells of a muffin tin with paper liners. Place an Oreo cookie in the the bottom of each paper liner and set aside.
  2. 2. In a large bowl or the bowl of a stand mixer, add the flour, sugar, baking powder, and salt, and whisk to combine. Mix in the butter until the mixture resembles coarse crumbs. Add the eggs one at a time, mixing after each addition. Combine the milk and vanilla extract in a small bowl or measuring cup and add half of the milk mixture to the batter. Mix until smooth, then add the other half of the milk mixture and mix until smooth.
  3. 3. Scoop into prepared muffin tin, filling 1/2 to 2/3rd full. Bake 20 minutes or until the tops spring back when touched lightly and a toothpick inserted into the center comes out clean. Remove from oven and cool completely on a rack.
  4. 4. After the cupcakes have cooled, beat together the marshmallow creme and butter until light and fluffy. Add the powdered sugar and vanilla and add enough cream to make a smooth, easily pipeable frosting. Beat until light and fluffy. Mix in the finely crushed Oreo's. Pipe onto the cooled cupcakes (I used a jumbo round tip) and garnish with additional Oreo's as desired. Enjoy!

 As I said earlier…this recipe is a keeper!  I am sure that when the kids hear about these they are going to want some for Sunday dessert too!cookies and cream cupcakesI love the little surprise in the bottom of each cupcake!  These are extra decadent and make for a very sweet treat!  Do you have a special occasion coming up that you might need to try out these cupcakes?  Or hey, maybe even a family night would be special enough!
