About ten days after my accident, I started to get my appetite back and for some reason a pasta salad sounded so good to me! My husband was still doing the cooking at that point, so I walked him through how to make it! There really is no recipe for this salad, but the secret ingredient is the basil!
To make your own Basil Pasta Salad, cook your favorite pasta according to the directions on the package for “al dente”. I used the tri-color rotini because I love the color that it adds to this salad. Drain and drizzle pasta with a little bit of olive oil. Let cool completely. To make salad, add fresh quartered mushrooms whole grape or cherry tomatoes, sliced or whole olives, sliced green onions, chopped green pepper, sliced carrots and sliced pepperoni. To make this salad taste out of this world…chop a few fresh basil leaves quite small and sprinkle over the top! You can then serve with your favorite salad dressing. I like ranch or Italian dressing on mine. (Do not mix the dressing in the salad unless it is all going to be eaten at one meal. The leftovers get very soggy. So I just add the dressing to each individual serving, then you can save the leftovers!)My husband was really quite proud of himself and could not get over how good this salad tasted with just the simple addition of the basil!
He pan fried some Tilapia to go with this salad and we had a delicious meal!
So now you have a new salad to try! Just by simply adding the fresh basil, it gives this salad a whole new taste!
I absolutely Love basil! I have some growing in a pot on my deck. Seriously, I could smell it all day. Delicious. Can’t wait to make this salad! Yummy! I wish I could find a basil scented candle.
