Chicken Pesto Pizza

Do you need a super easy, super scrumptious meal?  Well, I have one for you today.  It is Pesto Chicken Pizza! This is perfect for those busy days when you have little time to prepare a meal but want to have something more than fast food! This is one of those recipes that you can totally personalize to your own taste.  You start with a loaf of frozen bread dough.  Let it thaw out and raise.  Then roll it out for your pizza crust.    Spread your pizza crust with Pesto.  You can make your own or use store bought.

Because I only cook for two, I cut off a portion of the dough and made them into bread sticks.  I sprinkled them with garlic salt, seasoned salt and grated Parmesan cheese.I used this already cooked chicken and it was so easy.  Take out what you need and heat it up in the microwave a bit. Next, just add all of your favorite toppings!  I added chicken, olives, mushrooms and tomatoes.  Then top with a little grated mozzarella and Parmesan cheese. You can add anything that you like on your pizza to make it so yummy.  Another topping that I would add in sliced green onions, but I did not have any this time.  Bake at 400 degrees F for about 20-25 mins or until crust is brown and cheese is bubbly..  My husband has requested this recipe a second time and said that it tasted just as good the second time as it did the first!

I really doesn’t get any easier than this with frozen bread dough, prepared pesto, and precooked chicken.  You can make this in a jiffy.  Just remember to take your bread dough out ahead of time.

So do any of you have a favorite, easy, go to meal that takes very little effort and yet is so full of flavor?
