Frozen Fruit Salad

Today I have a great little recipe that you can make ahead and pop it in your freezer to use when you are ready for it!  This is perfect for all those busy summer days…and nights!

Frozen Fruit SaladIn the original recipe, this is made in a bowl and put into the freezer for 20-30 minutes, but I made it into individual servings and froze them and then put them in a big Ziplock bag for individual servings whenever you want them!

Ingredients
  1. 2 cups fresh strawberries-hulled and sliced
  2. 4 Tablespoons Sugar or artificial sweetener
  3. 4 bananas- sliced
  4. 2 cans mandarin oranges-drained
  5. 1/2 cup shredded coconut (optional)
  6. 1 small package strawberry Jell-O (I used sugar-free)
  7. 1 cup whipping cream
  8. 6 tablespoons powdered sugar
  9. 1 teaspoon vanilla
Instructions
  1. Put 18 cupcake liners in cupcake pans.
  2. Sprinkle 4 tablespoons sugar over sliced strawberries and allow to sit. Mix cream with powdered sugar. Whip cream with electric mixer until soft peaks form. Add vanilla and Jell-O. Beat for one more minute. Stir strawberries, bananas, oranges and coconut into the whipped cream mixture. Scoop into cupcake liners with a food scoop. Freeze until hard. Put individual cups into a large Ziplock bag. Take out of freezer 15-20 minutes before serving.
Notes
  1. If you want to lighten this recipe you could use lite or fat free cool whip instead of the cream and powdered sugar.

 This recipe is a perfect addition to any meal.  It is so light and refreshing.  Of course you could add any fruit…I am thinking peaches or raspberries would be wonderful in this salad.  You could also change the flavor of Jell-O that you add.  You can custom make this salad to your own individual tastes!

This would even be a great dessert! :)

So do you need a yummy fruit salad for dinner tonight?  Make this up and then you can save the rest for dinner another night!  This is a win/win situation!
