Some of my friends and I and my girls have attended the Taste of Home cooking school a couple of times. They are always fun to attend and you always get some great ideas. At one of the ones we attended they did this Baked Potato Soup. It is such a good comfort food and it is so easy to make. I usually have most of the ingredients in my pantry and fridge, so I can make this at any time.
Baked Potato Soup (Taste of Home)
1/4 cup butter
1/4 cup chopped onion
1/4 cup flour
1 can (14 ounces) chicken broth
1 can (12 ounces) evaporated milk
2 large or 3 medium baked potatoes
Salt and pepper to taste
4 bacon strips, cooked and crumbled
1/2 cup shredded cheddar cheese
3 tablespoons sliced green onions
Melt butter in large saucepan over medium heat. Add onion; cook, stirring occasionally, for 1-2 minutes or until tender. Stir in flour. Gradually stir in broth and evaporated milk. Scoop potato pulp from one potato; mash. Add pulp to broth mixture.
Cook over medium heat, stirring occasionally, until mixture just comes to a boil. Dice remaining potato skin and potatoes; add to soup. Heat through. Season with salt and pepper. Top each serving with bacon, cheese and green onion. Yield: 4 servings
(I have done a lightened up version of this recipe with: light butter, 2 percent canned milk and low fat cheddar cheese and it really does not taste like a lightened up version!)
Just a side note:
On the top of the page in this booklet that they gave to us I have this written in the margin: To thicken any soup, add 1 Tablespoon of instant potatoes. This is a good tip and I have used it many times before and it works great!
Yesterday I was going through the drive up at a fast food place with a couple of my grandchildren and when I got up to the window to pay, the waitress told me that the person in front of me had paid our bill! I couldn’t believe how great it made me feel to be the recipient of someone else’s kindness!
So I now need to think of something to pay it forward to someone else! I think that I should make it a habit to pay it forward every week! If we all did that, can you imagine what a great feeling that would be! So perhaps I can challenge each of you to look for a way to pay it forward to someone this weekend!
