Tortellini Salad

I don’t know why I have never thought to make a tortellini salad before!  I love tortellini, but have always thought of it as a hot dish not a cold salad.  Well, I think that I am now hooked!  I have tried a couple of different versions, and I loved both of them!  This pasta is perfect for a salad with the cheese already in it.  You can use the frozen or the dried, whichever you prefer, I have tried both and like them both about the same.

Stuffed French Bread

Today I have a  great recipe that is one of my “go-to” recipes for an easy, quick, yummy meal that most all kids like (which is an accomplishment in and of itself!)

I made this for our super bowl party yesterday and I made enough to feed an army!  But what we had left over, got taken home for leftovers!  We had all kinds of finger foods like wings, Con Queso and chips, spinach dip, potato skins, relish plate and yummy PB brownies!

Not great diet food, but yummy party food!

Baked Potato Soup

Some of my friends and I and my girls have attended the Taste of Home cooking school a couple of times.  They are always fun to attend and you always get some great ideas. At one of the ones we attended they did this Baked Potato Soup.  It is such a good comfort food and it is so easy to make. I usually have most of the ingredients in my pantry and fridge, so I can make this at any time.

Mom’s Chili

This recipe is one of those that you just can’t hurry…but is worth the wait!

Is there anything better than a good hearty bowl of chili on a cold, and dreary day?

Mom’s Chili Beans

1 1/2 -2 cups red kidney beans-rinse well, then soak in a big kettle, (covering beans with hot water) for a couple of hours, then simmer over low heat until done (2-3 hours). You may need to add more water, so the beans do not boil dry.

Brown 1 lb hamburger,

add 1 onion diced and

1 green pepper-chopped

Add to beans along with:

1 large can diced tomatoes, or 3-4 cups tomato juice (I usually do a combination of juice a 1 small can tomatoes)

1 1/2 tsp salt

1/8 tsp paprika

1/8 tsp cheyenne pepper

1 bay leaf

1-2 tsp chili powder (depending on how spicy you want it!)

Simmer beans and rest of ingredients all together for 1/2 hour.  Remove bay leaf before serving. To serve you can top with shredded cheese, sour cream, corn chips, bread cubes or croutons.  Serve with a big slice of bread or your favorite crackers!
