Toasted-Pecan Coconut Blondies

I am not sure what it is about the Autumn time…that just makes me want to start baking again!  Maybe it is just the fact the air is cooler now and so I feel like I can turn my oven on again, or that the kids are back in school and I get myself back into somewhat of a routine too, but whatever it is that gets me going, I am thankful for it…because I really do love to bake!  And It just is not fall without recipes that call for pumpkin, apples, or caramel!

Blackberry Peach Cobbler

My dad gave me a bowlful of blackberries before we went on our trip and I put them in the freezer because I did not have time to do anything with them before we left.  But in Washington and Oregon blackberries just grow wild everywhere and I kept seeing restaurants  that had blackberry cobbler on their dessert menu.  So I have had blackberry cobbler on the mind and have been craving this dessert ever since we got home.. I finally got the blackberries out and I had a couple of peaches that I needed to use up, and  these two fruits together make the perfect combination for a cobbler!Blackberry Peach Cobbler

Homemade Mac and Cheese

After my husband and I got home from our vacation a week or so ago, I was craving some good old fashioned comfort food.  We had eaten out for every meal for 9 days straight and we were both tired of restaurant and fast food.  I thought that good old fashioned, homemade mac and cheese sounded good!  I really did not make this when my kids were growing up and I cannot figure out why, because most kids love mac and cheese and the homemade kind is so much better than the boxed kind!homemade mac and cheese

Salted Caramel Rice Krispie Treats

A week ago, my daughter sold her house and moved into a rental that my youngest son has.  I could not do any of the heavy lifting, so I told her that I would just get her kitchen organized and put together.  They had several people coming to help them move, so I decided that I would make a treat to take with me. Basil Pasta Salad

Oreo Sunflower Cupcakes

Today I have a fun food craft that you can do with the kiddos!  I am back to tending two of my grandkids a couple of days a week and I decided that we needed a project to do.  I still have some limited use in my right arm and hand, but I can cook again, so we decided it would be fun to make cupcakes!

BBQ Beef Salad Pizza

My husband and I went to a small restaurant awhile back, in Heber City, Utah called the Spin Cafe.  I ordered a version of this salad pizza and it was so good that I wanted to try to duplicate it at home!  I changed it up a bit, by adding cheese to the crust because I think that makes it more like a pizza!

This recipe is perfect for all of these hot summer days!  You only need to heat your oven for a short time and you can use any veggies that you already have or use up some of those fresh veggies from your garden!
