What a Week!

This has been a busy week here at the ranch.  Even though we are empty nesters it does not mean that we slow down very much!

My husband and I took a quick little trip to St. George, (Southern Utah)  the first few days of the week.  We went to two of the Tuacahn Theater Shows,   “Aladdin” and “Hairspray”.  They were both so good and the weather was pretty good although the first night we were there the wind came up and it got downright cold!  We figured if we were going to see these shows that we had better go now, because they are going to end this week!  We really enjoy going to the different shows every year!  Thriller starts next week and I would love to see that one too, but I doubt that we will make it back down there to see that one!  Maybe next year!

Halloween Muddy Buddies

The other day I had one of my best little helpers with me and we decided that we would like to make something good to eat!

My little helper was great at measuring and pouring the ingredients into the bowl.  I love to have a little helper in the kitchen, don’t you?

We decided that these Halloween Muddy Buddies would hit the spot, what do you think?  Do you want to make some too?

“Eye” Candy Jars

I have some exciting news to share with you today!  I am going to be showing how to make these candy jars on Good Things UtahGood Things Utah - Weekdays at 10 a.m. on ABC 4

on Monday, Oct. 8th at 10 am.  I would love for you to join me and watch the tutorial of how to put these cute little babies together!

But for all my readers, here is the tutorial for you to make an “Eye” Candy Jar like these that we made at our craft retreat. They are so easy to make and yet are so darling!  The thing that I love about these jars is that you can eat the candy after the holiday is done and then fill it up again for the next holiday!  Apparently they make “Peeps” for most every holiday!  Something that I didn’t  know because I don’t like to eat them.

Better Than “Hunting” Chex Mix

There is a story behind this title…

a while back one of my DIL’s brought dessert for dinner on a Sunday get together and when they arrived at our house, she told her oldest son (age 9) to tell me what they had brought for dessert.  He declared: “Better than Hunting Cake!”  (Remember, that this is our little hunter!)  Well, we all got a good laugh out of that and we all knew what the real name of the cake was, but he thought that was the real name.  He has a smart mom to avoid that topic!  So anyway here is a version of Chex Mix that is called Better Than Sex Hunting Chex Mix that is to die for.  You have to be careful because this one is soooo addicting!  It is a combination of chocolatey, sweet, salty, peanut butter, and marshmellowy bliss! Salted Caramels

I saw a bag of salted caramels at a boutique in our neighborhood last weekend, but for some reason I did not buy any and then I could not seem to get them off my mind! So I came home a decided to give my hand a try at making some.  I found a recipe that used sweetened condensed milk and adapted it to make these.  I asked my husband to taste them and tell me what he thought.  He said that there was something wrong with them and I thought he was going to say that they were salty, but he said what was wrong was that you could not eat just one!  He loves them!  He has made several comments since on how good they are!  So that is quite the compliment!

English Toffee

Ok, so this is the last candy post, at least for this week! :)  I am starting to feel the sugar high a little bit too much.  I started making this candy at 7:30 am and my husband was wondering what in the world I was doing and I just replied, “Oh, I’m just working on my blog!”  He just shook his head!

This candy is just the right combination of chocolate, nuts, and toffee.  I am also having the hardest time staying out of it, it is probably one of my favorite candies!

So let’s make English Toffee today!

Start by lining a cookie sheet with foil and then butter the foil.  Spread 1 cup chopped nuts on the cookie sheet.  ( I used pecans, but you can use whatever you have)

Mix 1 cup butter, 1 cup sugar, 1/8 tsp salt, 3 TLBS water, and 1 tsp vanilla.  Put in a kettle and bring to a boil.

Reduce heat to medium and stir constantly until mixture is light brown in color and crack stage has been reached (300-310 degrees on candy thermometer) If you want to know how to test for crack stage, go to the Anise Candy post.

Spread cooked candy thin over nuts.

Sprinkle 11.5 oz package of chocolate chips on top. ( I used milk chocolate, but semi-sweet would be good also, totally your preference!)

When melted, spread over all of the toffee.

Sprinkle 1/2 cup chopped nuts on top of chocolate and press down into the chocolate with your fingers.

Break into pieces and enjoy!  This is another candy that is great to give as gifts, to fill a candy dish with, or just make for a treat for yourself!

Here’s the recipe:

English Toffee

1 cup butter

1 cup sugar

1/8 tsp salt

3 TBLS water

1 tsp vanilla

Combine in a kettle and bring to a boil. Reduce heat to medium and stir constantly until mixture is light brown in color and crack stage has been reached (300-310 degrees on candy thermometer)

1 1/2 cups chopped nuts

11.5 oz package chocolate chips

Place buttered foil on cookie sheet and spread with 1 cup of the chopped nuts. Spread cooked candy thin over nuts. Sprinkle chocolate chips on top. Let melt and spread over entire candy. Add remaining 1/2 cup chopped nuts on top. (I pressed them down with my fingers into the chocolate)

Break into pieces when cool. Enjoy!
