Breakfast Parfait

I know that it is officially fall now and that I should be posting pumpkin recipes and enjoying all the wonderful fall flavors, but I still have raspberries coming on, so I will enjoy them while they last!

Last weekend at  our craft retreat, as part of breakfast, my sister made some wonderful breakfast parfaits using fresh raspberries and I enjoyed it so much that I came home and made up a batch of my Easy Crunchy Granola and went out and picked some more fresh raspberries and made myself another breakfast parfait!

Sugar-Crusted Lemon Raspberry Muffins

My raspberries are in full swing right now, but my dad has even more that I do and we are trying to keep up with them!  I usually just pick them and wash them, then put them on a lined cookie sheet to flash freeze them.  That way I can use them whenever I am ready.  I had in my mind that I wanted to make some muffins and I love the lemon blueberry recipe that I have, so decided to try another version with raspberries.  They did not disappoint!

These are perfect for the freezer, you can just take out the amount you need, warm them up a bit and you are good to go!

Fall Sweet & Salty Mix

Here is the recipe that I promised, for a yummy sweet and salty fall mix that I used to give the sisters that I visit teach.

I love the buttery, salty flavor of the bugles for the base of this recipe, it is also a great recipe because you can add whatever you want to make your own version!  I think that dried cranberries, chocolate pomegranates or spiced gumdrops would also be wonderful in this mix!

Chocolate Chip Cookie Ice Cream Sundae

This  is a great dessert to make because it looks like you went to a lot of work, when you really didn’t!   So if you want to impress your family, friends, co-workers or neighbors, just make this dessert! :)

This is just a basic Toll House Cookie recipe that you bake as pan cookies, so that is why they are so easy!  I used butter in these to give them that rich, buttery flavor!

Parmesan Crusted Salmon

This recipe that I have today has become one of our all-time favorites!

I have not always been a big fish eater, but lately I have fallen in love with the salmon fillets from Costco.  They are individually frozen, so I can just take out what I need.  They always taste so good because they are each wrapped separately and it really preserves their freshness.  I love this recipe because another one of my food loves is… Parmesan cheese!

Tortellini Salad

I don’t know why I have never thought to make a tortellini salad before!  I love tortellini, but have always thought of it as a hot dish not a cold salad.  Well, I think that I am now hooked!  I have tried a couple of different versions, and I loved both of them!  This pasta is perfect for a salad with the cheese already in it.  You can use the frozen or the dried, whichever you prefer, I have tried both and like them both about the same.
