Homemade Ice Cream in a Bag

Better Than “Hunting” Chex Mix

There is a story behind this title…

a while back one of my DIL’s brought dessert for dinner on a Sunday get together and when they arrived at our house, she told her oldest son (age 9) to tell me what they had brought for dessert.  He declared: “Better than Hunting Cake!”  (Remember, that this is our little hunter!)  Well, we all got a good laugh out of that and we all knew what the real name of the cake was, but he thought that was the real name.  He has a smart mom to avoid that topic!  So anyway here is a version of Chex Mix that is called Better Than Sex Hunting Chex Mix that is to die for.  You have to be careful because this one is soooo addicting!  It is a combination of chocolatey, sweet, salty, peanut butter, and marshmellowy bliss! Cherry Limeade

On the 4th of July I made this tart cherry limeade.  It was so refreshing on a hot summer night.  I just kept drinking it and could not get enough!  I asked my husband on a scale of  1-10 what he would rate it and he gave it about an 8.  I, on the other hand had to give it a 10!  So either way, I guess you would have to say that it will be one of our new favorites  in summer drinks! Toffee Bars

This is one of those recipes that I have had in my family for a lot of years and I have made it many times.  It is great for the summer, because it is a bar cookie and you can just bake it all at once in one pan, and you don’t have to heat up your house for very long! It also has very basic ingredients that you probably already have at your house.

Back in the day, I used to make this recipe with shortening, but if you think about it, Toffee is made with real butter, so I changed out butter for the shortening and oh my, what a difference it made!  I asked my husband if he wanted one last night and he said, “No…I want two!”  They are that good!

Frozen Fruit Cups

These little fruit cups are to die for!  They are such a treat and they are wonderful because you make up a big batch and put them in the freezer and they are ready to go whenever you need one!  They are my “go to” for breakfast, but they are good at noon or at night too!  They are so refreshing, especially on a hot summer day!  I always eat mine partially frozen and it is a frosty fruit delight!

The recipe is from Pioneer Woman and you can get the recipe here.

It has frozen peaches, canned mandarin oranges, crushed pineapple, bananas, fruit juice concentrate and lemon juice.  Her recipe calls for fruit cocktail, but I don’t like that, so I just add a few more peaches!   When I started making this recipe I had frozen peaches from my garden, but they are long gone and now I have to buy the peaches.  But I will be freezing a lot more peaches this year just for this recipe!

Nutella No Bake Cookies

I remember when I was a young girl, coming home from school and making No Bake Cookies.  I always thought that they were the best treat ever!  I used to mix in all kinds of things like coconut, nuts, raisins, etc. whatever my mom had in the cupboard at the time.  But not once, ever, did I think to put in Nutella!  Well, I saw this idea out there somewhere in blog land and had to give it a try.  I was pleasantly pleased with this add-in item!  The hazelnut flavor is kind of subtle, but it is there.  My husband thinks that these are good for you with the oatmeal and all and I just let him think that!

Chocolate Butterscotcheroos

Summer is here and so now it is officially the quick, easy to make, no bake season!  This is the time of year that I look for recipes that require little time and effort to make and this recipe fits the bill perfectly.  I don’t know who named this recipe, but I have been making it for my family for many years!  There are a lot of variations of this recipe but I love this one because it is a chewy, yummy, chocolately, peanut buttery, bliss in every bite treat!  So if you need a quick snack to fix for your family this summer you really should try these Chocolate Butterscotcheroos!

Chocolate Butterscotcheroos
1 cup white syrup
1 cup white sugar
Boil together in a large pot and add
1 cup peanut butter.  Sir till PB is melted.
Add 6 cups rice crispy cereal.
Stir well and press into a 9 x 11 cake pan that has been sprayed with a cooking spray.
Melt 1 10 oz. package of chocolate chips and
1 10 oz. package of butterscotch chips together and spread over the top.
Let it set up and cut into bars and serve.

So easy and so yummy. This is a great recipe for the kids to help you make, and what kid doesn’t love to help in the kitchen when it is a fun treat?  It is  perfect for summer snacking, picnics, BBQ’s, ballgames, etc.  Easy to make and easy to transport right in the pan!  So what are you waiting for, let’s go make some Chocolate Butterscotcheroos!
