Halloween Muddy Buddies

The other day I had one of my best little helpers with me and we decided that we would like to make something good to eat!

My little helper was great at measuring and pouring the ingredients into the bowl.  I love to have a little helper in the kitchen, don’t you?

Mom’s Chicken Corn Chowder

This recipe is from my mom, who was an excellent cook.  She cooked a hot homemade meal for us every night and she always made everything taste so good!  My mom was a great teacher and I thank her for her patience and willingness to let us cook in her kitchen!  (Some days I really miss my mom)  I hope that I followed her example by allowing my kids to feel free  to cook and experiment in my kitchen.  I hope that you will let your kids cook with you and that you can share some fun memories in the kitchen, because that is where we spend so much time together as a family.

This recipe is one of those good comfort foods that I turn to a lot of times.  It is easy to make, yet is a good hearty soup that will fill you up and make you feel oh so good!

Homemade Bottled Spaghetti Sauce!

I think that I am done with all of my canning for this year.  I have done Blackberry Jam, Frozen corn, Spaghetti Sauce, and bottled peaches.

My favorite thing to have on hand is this wonderful spaghetti sauce.  A lot of people bottle tomatoes and then add a dry mix later to make their sauce, but I love the taste of this already made spaghetti sauce with all those wonderful flavors cooked together for hours and blended together!  I use this for spaghetti, of course, but also ravioli, tortellini, lasagna, and it makes a great pizza sauce! Sept. 2012 Visiting Teaching Handout

This month’s lesson is titled “Special Needs and Service Rendered”  I love the message to all of us about how we need to serve others!  President Monson is such a great example of this and we probably could all do a little better in this area…I know that at least I could do better!  For this month’s handout I decided to use a fall theme with owls.  I bought these owls at the Wood Connection and painted and decorated them, and they were my inspiration for this handout.

Cashew Chicken Casserole

Here is another good comfort food that is great for when you know you are going to have a busy day, because you make this the night before and put it in the refrigerator!   The next day you simple pop it in the oven and dinner is ready!  I made this last Saturday night, and then on Sunday when all the family came for dinner, all I had to do was cook it!  So easy, yet so so good!  This dish is so full of goodness and flavor.  It has macaroni, chicken, veggies, and a yummy crunchy topping.  I’m pretty sure you are going to want to add this to your list of favorites.

Hearty Chicken Noodle Soup

The weather has cooled down just a bit here is in Utah and this chicken noodle soup just sounded so good.  It is the best comfort food there is!  This is a hearty soup with the veggies, onion soup mix and the cream of chicken soup so it is chock full of flavor!  It is so easy to make with all the soups added in and it can be done in no time flat, so if you have any busy fall evenings coming up you just might want to try out this recipe!

Blackberry Cobbler

Yesterday I made blackberry jam and I had a few berries left over so I decided to try making a cobbler with them.  I already told you how much I am in love with these berries and they rang true again with this cobbler!  My husband kept saying how good this was and kept asking me what was in it that was different, so that is how good they are… for him to even notice! Blackberry Jam

My dad planted some blackberry bushes last summer to see how well they would do in his garden.  Well apparently, they love the spot that he planted them because the bushes are loaded with berries this summer!  They are big beautiful berries and so my sister and I and dad went and picked some for him and we made blackberry jam.  Then the next week my sister went and picked for herself and made blackberry jam.  Yesterday, I went to pick for me and I made more blackberry jam and the bushes are still loaded with more berries!  I don’t know about you, but I had never really had access to blackberries and thought that they were just a tart berry with a core in the middle, little did I know that they make the best tasting jams and jellies.  I think I prefer it over raspberry jam and I love raspberry jam! Coconut Cupcakes

I made these coconut cupcakes with chocolate ganache for our Sunday dinner and they are to die for!  They have coconut milk and coconut flavoring in them and they are so moist and yummy, then you add a layer of chocolate ganache between the cupcake and the fluffly cream cheese frosting… oh so heavenly!
